This chicken wing recipe will allow you to still have something super crispy, succulent, and incredibly flavorful without deep frying!

Ingredients

Crispy Bacon Fat Chicken Wings
  • 2 dozen chicken wings (I prefer to separate the flat from the drum. I cut off the wing time and save it in the freezer for chicken stock)
  • 1 tablespoon bacon fat
  • 1 tablespoon extra virgin olive oil (so the bacon fat won’t burn while cooking)
  • 1 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Herbs de Provence

Instructions

  1. Begin by placing your wings on a paper towel-lined baking sheet for 20 minutes; up to one hour. Do not put them in the fridge. This allows the wings to come to room temperature (which is ideal for cooking any protein) and will allow the skin to dry out a bit which allows them to get crispy.
  2. Preheat the oven to 300 degrees. Place wings into a large bowl and line the baking sheet with aluminum foil. Drizzle fat and oil over wings and sprinkle with seasonings. Toss wings until seasoning and oils are evenly distributed among wings.
  3. Place wings on the foil-lined baking sheet, being sure to keep the wings from touching. Place wings in the oven and cook for 30 minutes. Increase oven heat to 425 and bake for another 15-20 minutes.
  4. I actually love these wings without sauce, but if you want to put sauce on your wings, remove them from the oven and toss in the sauce. Place them back on the baking sheet and bake for another 5 minutes. Remove from the oven.
  5. Enjoy!
