Duck Fat Biscuits

Yep! You read the title right. We’re making DUCK FAT biscuits here! The flavor of these biscuits is unmatched. They are the perfect savory biscuit. Imagine this biscuit w/ a duck bacon BLT. HELLO!

The most important thing you need to know about this biscuit is that you need to measure and chill the duck fat before you can make these. I measured out 1/3 cup of duck fat and froze it before I started this recipe. Make sure you are freezing it in a container that is easy to get it out of.

Ingredients

Duck Fat Biscuits
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/3 cup cold duck fat, cut into pieces
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  2. To prepare biscuit dough, begin with cutting the duck fat into pieces. These won’t be perfectly uniform pieces because of freezing it, but you want small pieces close to the same size if possible. Once you have the duck fat into pieces, store it in the fridge until you are ready to use it.
  3. Sift flour, baking soda, baking powder, and salt together in a large bowl. Add the duck fat pieces to the bowl. Cut the duck fat into the flour mixture with a pastry cutter (or two forks). The mixture should combine and come together to form pieces the size of peas. Add buttermilk and stir with a fork.
  4. Flour your countertop and place the dough on the floured surface. Work the dough slightly just until it comes together.
  5. Using a floured rolling pin roll the dough into a rectangle about 3/4 inch thick. Fold the dough like you would be folding a letter. Bring both ends of the dough to the middle and then fold again. Roll out the dough to a rectangle again. Repeat folding and rolling two more times ending with dough rolled into a rectangle about 1 inch thick. Cut dough using a biscuit cutter or cut into squares. Place the biscuits on the parchment-lined baking sheet. Bake at 425 for about 20 minutes or until the tops are golden brown.
  6. Remove from oven and brush with butter. Serve warm.

Notes:

You can totally make these with oil good for grilling like canola oil or vegetable oil instead. You can soften 1 tablespoon of butter, mix it with 1 teaspoon of brown sugar, and top it with dollops of the brown sugar butter right off the grill! (See this in my IG stories.)
