Sweet Potato Hash

So last month I told you all that Thanksgiving was like the Super Bowl to me and Christmas is like The Olympics. Trust me when I say this is definitely holding to be true this year. I love this time of year. Every single chaotic second of it. Well, not the gift wrapping part, but you get my point.

One of the main reasons why I love Christmas so much is the memories that come with it. Being the baby and only girl in my immediate family, and the same for one pair of my grandparents, Christmas was a BIG DEAL for us. Spoiled Rotten doesn’t begin to sum it up!

Although my brother and I had more than we could possibly ask for under the tree, as kids, we were always pointed back to the true meaning of Christmas–the birth of Jesus Christ. My grandfather made sure of that. Every year, while sitting at the dinner table, he would read what felt like pages of scripture and pray the longest prayer I think I’ve ever sat through (that’s totally where my Dad gets it from). Our food would basically be cold by the time he was done. That is a Christmas memory I will never forget!

Christmas was also about the only time you ever saw my grandfather in the kitchen (unless he was making homemade ice cream, which he usually did outside, or roasted peanuts). He would pull out all the stops–biscuits, country ham, fried potatoes, scrambled eggs, etc. Of course, this came with help from my grandmother, but my grandfather was the star of the show when it came to Christmas breakfast.

Once my grandfather passed away, my Dad started making Christmas breakfast, and now I do (cause I’m not as nice as my grandmother–letting other people in her kitchen).  For the last 2 years I have made Christmas breakfast, but the tradition of unwrapping gifts then sitting down to have a big breakfast has never gone away. Christmas breakfast is just as significant, in my family, as Christmas dinner. Because of that, I want to share with you a delicious Christmas breakfast option that will fill you up, but still leave room for the big feast later that day.

Sweet Potato Hash

Sweet Potato Hash

My Christmas gift to you is my Sweet Potato Hash. It will fill your mouth with the tastes of this season.

Ingredients

Sweet Potato Hash
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil (or coconut oil)
  • 1/2 lb ground chicken sausage (apple chicken sausage works well for this)
  • 2 sweet potatoes, peeled and cut into bite size pieces
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly ground nutmeg
  • 2 teaspoon sea salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 apple cored and chopped
  • 1 cup fresh cranberries

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté onions and garlic until translucent.
  2. Add chicken sausage and cook until browned. Once sausage is brown, add sweet potatoes and coat with oil remaining in the pan. Cover with lid and let cook for approx. 5 minutes.
  3. Remove lid and stir mixture. Color should be developing at this point, but the sweet potatoes probably aren’t done. Cover with lid and cook for another 5 minutes.
  4. Remove lid a second time and stir. Sweet Potatoes should be soft at this point. Once they are soft, add apples and cranberries and stir. Allow apples and cranberries to heat through for 1-2 minutes then remove pan from heat.

Notes

My favorite way to eat this is with a fried egg on top.  You could also serve it on top of a waffle and drizzle maple syrup on it.  Either way it goes, you’re going to love it!
