Turkey Bolognese Spaghetti
 

Turkey is Tasty, y’all! That’s what I celebrate with the Indiana Turkey Farmers. I teamed up with them to create some delicious recipes, and they are all TASTY!

The first recipe is one that I make for my paleo clients often. One of my clients said they could eat it all by itself with no noodles at all. Of course, my paleo clients get it with zucchini noodles, but you can choose whichever spaghetti-shaped noodle you like!

Ingredients

Turkey Bolognese
  • 1 tablespoon extra virgin olive oil
  • 1 pound ground turkey
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 3 ribs celery, diced
  • 1 cup mushrooms, minced
  • 4 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 3 tablespoon tomato paste
  • 1 tablespoon anchovy paste
  • 2 tablespoon balsamic vinegar
  • 1 28 oz can crushed tomatoes
  • 2 teaspoon sugar (when making the paleo version, use honey or coconut sugar)
  • 1/4 cup fresh basil, torn into pieces

Instructions

  1. Heat a large skillet to medium heat. Drizzle olive oil to coat the skillet and add onions, carrots, and celery. Sauté for 3 minutes. Add garlic and continue sautéing for 1 additional minute. Add minced mushrooms and sauté for 3-5 minutes. Be sure to stir the veggie mixture to prevent sticking and burning.
  2. Add ground turkey. Cook and crumble turkey until cooked through. Add Italian seasoning, salt, and pepper and stir until combined.
  3. Stir in tomato paste and anchovy paste and continue cooking for 1-2 minutes before adding balsamic vinegar and crushed tomatoes. Stir in sugar and lower heat. Allow sauce to simmer for at least 10 minutes, up to an hour before serving. Fold in fresh basil right before serving.
  4. Stir into spaghetti noodles or vegetable noodles and top with freshly grated parmesan cheese.
  5. *Note: I strongly recommend you stir the sauce into your pasta vs serving it over your pasta. The sauce is made to stick to your noodles!
